Knäck & Bräck

Hand-made and ecologically baked with flour from ancient varieties of grain – that’s the motto of Annalena Brage and Niclas Geidvall, who run Knäck & Bräck just outside Falköping in Västra Götaland. Here they produce crispbread and rusks with lots of exciting tasty seasonings, free of additives. The flour is supplied by local producers and comes from old varieties of grain with wholesome properties. Examples are Spelt, which has been cultivated for 8,000 years, and its predecessor Emmer, which goes back 12,000 years. “These ancient varieties of grain are a cultural heritage which must be preserved for the future”, says Annalena.
